We had so many laughs making our pizza. We also learned some interesting facts of the art of pizza. The best part of course, was eating our pizzas and enjoying our wine. I would highly recommend this adventure when in Sicily.

What a fun morning. The pizza courtyard restaurant is just outside the Porta Messina, so it is very easy to find. Our class had about 30 participants, which we would later learn that we were later divided into the cooking class (about 22) and pizza making (8 of us). We started by having a choice of espresso, cappuccino, latte, etc. We were presented aprons. We then were given ingredients to start kneading dough in making macaroni. This took about 30-45 minutes. We then rolled out the balls of dough into fine tubular shapes, that were cut into small bits. We then had thin sticks (wooden pick-up sticks) that we wound then roll out to make individual macaroni tubes and place into a dish. We each contributed about 60 pieces each. We then were escorted back outside into the outdoor seating for wine and anti-pasta plate including bread. After that we broke into pizza making or cooking class. Since we signed up for the pizza, we went to the table with our pizza goods ready to make. We had water, yeast, olive oil, semolina flour and regular flour. We gradually added the various products as we folded, pressed and kneaded the dough into a ball. This took about 20-30 minutes. We had assistance all the way, including our macaroni making. Our dough balls were taken up to be used the next day for pizza. Each ball we made translated into 4 pizzas. The dough needs 24 hours to rise. We were given dough that has been made previously. We were shown how to spread the dough out. We then had about 20 toppings to choose from to make our own pizza. It was placed in a wood burning stove and soon we had our pizzas ready to eat. We did some sharing. We were then given our macaroni that we made earlier that was mixed in a spicy sauce. Yum. Overall, there was a lot of socializing and enjoyment in sharing the eating.
