After hotel pickup in Phuket, travel by air-conditioned minivan to the Thai cooking school. On arrival, head inside, meet your instructor chef for the day, and be shown to your individual cooking area in the professional school kitchen.

Then, enjoy a fascinating introduction to Thai food and the ingredients, dishes, and techniques that make it one of the world’s most popular, delicious, and healthy cuisines.

Learn how local cooking emphasises fresh ingredients and achieving a delicate balance of flavours, and discover how many staples are believed to impart medicinal benefits. Find out, too, how Thai cooking centers on a variety of fresh herbs and spices, including chilli, ginger, and garlic, and nutmeg, cumin, and bay leaves.

Using these and other ingredients, learn how to prepare a starter and main dish such as hot and sour prawn soup, green curry with chicken, Thai fried noodles and fresh papaya salad – all regular fixtures on Thai tables. Then, under guidance from your chef, try your hand at a dessert, perhaps making mango with sticky rice, one of Thailand’s most popular sweets. Dishes to be made will vary from day to day.

Afterward, sit down to sample your creations for lunch, in the company of your fellow cooks. After tasting and discussing your cooking, depart with a recipe card so you can recreate your Thai dishes back home to impress your family and friends.
