The highlight of our trip to Morocco

My husband and I had a fantastic experience learning how to cook an authentic Moroccan meal with Hyat. She met us at the market where we did some shopping and a lot of picture taking, then we went to her beautiful villa for cooking. We made three different salads and a lamb cooked in a tagine. We also enjoyed the traditional peppermint tea while waiting for our food to cook. The best part was enjoying Hyat’s company. She was very easy to talk to and shared details about life in Morocco. What a pleasure it was to take this class. We highly recommend for anyone who if traveling to Morocco to take a cooking class from Hyat.

Hayat was a good hostess. I enjoyed the market visit and preparing the food together. I recommend this class for anyone with time to spare in Casablanca who wants to see a bit of local life and learn how to make some good local food.

Our party of five had the best time learning to cook Moroccan food with our host, Hayat. Hayat was a fantastic host - she arranged to pick us up from our hotel in central Casablanca, took us to a local market to buy supplies, and then welcomed us to her home to learn how to cook. Her home was lovely and well-suited to the cooking demonstration. We started with a welcoming Moroccan tea and an assortment of both savory and sweet cookies. Then we began in the kitchen where we were led, step by step, in preparing two appetizers and two main dishes. For the appetizers, we made an aubergine spread and a pepper spread - we prepared the ingredients (lots of chopping) and helped with the cooking. We also had a choice of entrees but our group decided the chicken tagine and lamb with prunes were the way to go. The chicken was cooked in traditional tagine pots over coals in Hayat's kitchen. The lamb was prepared in a pressure cooker. Hayat walked us through the recipes and the spices used, step by step. The results were fabulous - we ate like kings. After all that food we then had tea and/or coffee, oranges and Moroccan cookies. Eventually we rolled out the door and were provided a ride back to our hotel. I think we don't need to eat for another 3 weeks. The experience was so much fun. Hayat was a great teacher. She is multi-lingual and fluent in English (and French and Arabic). We really felt like we got a glimpse at local life and learned about preparing Moroccan food. It was a wonderful way to spend a day in Casablanca - highly recommended!
